Frozen Hot Chocolate

Yesterday I had a little party for my Grand kids they opened a couple of gifts from their Great Grandma and me. TJ the little redhead was full of piss and vinegar until he opened his first present. He loved it!! Air Hog was top on his list this year and he was not disappointed. Abbie got just what she wanted also a sketch pad (she is an artist!!!)  she can look at anything and draw it. I must say she is the creative one in this family. Liam just got homemade pj's  he really needed them. Kealey and James are in Virginia so they could not be here I really miss them!! We had Pizza and my famous frozen peppermint hot chocolate. Recipe to follow.

Here is the recipe for the frozen hot chocolate. This one is a winner every time my grand kids
come over the first thing they ask is "can we have some of your special hot chocolate?"
Ingredients
  • 6 pieces (1/2-ounce) chocolate , a variety of your favorites
  • 2 teaspoons store-bought hot chocolate mix
  • 1 1/2 tablespoons sugar
  • 1 1/2 cups milk
  • 3 cups ice
  • Whipped cream
  • Chocolate and peppermint shavings (optional)
Directions
Chop the chocolate into small pieces. Place it in the top of a double boiler over simmering water. Stir occasionally until melted. Add the hot chocolate mix and sugar. Stir until completely melted. Remove from heat and slowly add ½ cup of milk until smooth. Cool to room temperature.

In a blender, place the remaining cup of milk, the room-temperature chocolate mixture and the ice. Blend on high speed until smooth and the consistency of a frozen daiquiri. Pour into a giant goblet and top with whipped cream and chocolate shavings.
Cheaper version

Crush a candy cane or peppermint candy into small pieces place it in the hot
chocolate mixture. This step is optional plain frozen hot chocolate is just as yummy.
